You guys! I am in love with these cupcakes! Who knew the potential of some tiny little animal toys to make a simple cupcake SO STINKING CUTE! If I were completely crazy, I would have invited all the neighborhood kids over on a whim for a Christmas party just to enjoy these little darlings. I was THIS close. My sweet friend Brittany of Bake It Pretty sent me these months ago, and I’m so glad I remembered them sitting in my cabinet. Coupled with my Christmas Pandora station, this cupcake making made for a very festive afternoon with my kiddos. I’m all about simple you know. But not at the expense of yummy-ness. These cupcakes came together in a pinch and still felt special. Here’s what you do:
–For the Chocolate Chip Cupcakes: Prepare a boxed vanilla cake mix, substituting the water for some kind of dairy. I used milk, but a milk/half and half combo would work well, as well as subbing in some sour cream. Then when it’s all combined, add a cup of chocolate chips. Bake as directed.
–For the Coconut Frosting: Make your favorite basic buttercream. (2 sticks butter–beated, 5 cups powdered sugar–added a little at a time, and then a few tablespoons of milk.) Then add a dash of coconut extract to finish. After you’ve frosted your cupcakes, sprinkle with some flaked coconut. Unsweetened I think is best or else it might be a bit much.
Use some cutesie Christmas liners and add each of Santa’s eight reindeer atop their own little cupcake! Find the adorable reindeer toppers HERE! When I saw how cute they looked I thought I should give each of them their proper reindeer name, so I added that to the top, too. Wouldn’t kids think it was so fun to pick which reindeer they got atop their cupcake?
Last of all, no special occasion is needed to make cupcakes–we know this. Especially around the holidays it seems every day is a baking day. But if you wanted to, you could totally build a simple party theme around these darling little guys. Search Pinterest for some “Reindeer Games” (Minute-to-Win-It, perhaps?) and give a little tribute to Santa’s favorite forest friends.
