‘Tis the season for pumpkin everything! I went to Trader Joe’s the other day and came back with all things pumpkin! Pumpkin soup, pumpkin seeds, pumpkin butter, and pumpkin Joe Joe’s (those just jumped into my cart). And I’m sure they had pumpkin pancake mix, but you know–moderation. Actually, I just knew we already had pancake mix and canned pumpkin puree, and that is all it takes for this yummy breakfast! Making festive food is one simple way to have more fun at home with your family. My kids think it is the coolest thing ever when their food comes in fun shapes, and if it has a face?? Well, they are over-the-moon. The best part, it is a simple gesture with a big payoff. Read on for the super easy how-to.

3-Step Directions

1. Prepare whatever pancake mix you like, or have on hand.

2. Depending on how much batter you prepared, add 2-3 tablespoons of pumpkin to the batter (per 10 or so pancakes). A little bit really goes a long way here.

3. Cook them up on your frying pan or griddle the way you normally would. A pumpkin shape is pretty easy to achieve if you add just an extra dab of batter to the top of your normal circle. You can also add a chocolate chip face to make a jack-o-lantern if you like!

Before serving, we topped ours with that divine pumpkin butter from Trader Joe’s and a little whipped cream. Soooo good!!!
